Ingredients:
- 275g (1.2 cups) Plain Flour
- 3 level tablespoons of Cocoa Powder
- 1 1/2 teaspoons of Bicarbonate of Soda
- 1 1/2 teaspoons of Baking Powder
- 215g (0.9 cups) Caster Sugar
- 3 tablespoons of Golden Syrup
- 3 large eggs
- 225ml Sunflower Oil
- 225ml Whole Milk
- 200g (0.8 cups) Dark Chocolate
- 100g (0.4 cups) Milk Chocolate
- 300ml Double Cream
- A bag of chocolate M&Ms, or any other sweets or fruit you prefer
- Two 8x2 Kit Kat packets
- Scales
- Spoon
- Two 7 or 8 inch baking tins
- Sieve
- Baking Paper
- Electric Whisk
- Knife
- Skewer
- Large mixing bowl
- Cooling Rack
- Plate
- Jug
- Measuring Spoons
Put the bicarbonate of soda, baking powder and cocoa powder in a large mixing bowl and sift in the flour.
Add the caster sugar and mix all of it together.
Make a well in the middle of your mixture, so you can add the eggs, syrup, oil and milk. Mix with the electric whisk until smooth (it will still be runny, so don't panic).
Pour into the two trays and put on the middle shelf of the oven for 35 mins, test with a knife or skewer to check on them! When you touch them, they should spring back..
When done, put on a cooling rack for them to cool down
Whilst the sponges cool, pour the double cream into a saucepan and wait for it to bubble, then take it off the heat add ALL the chocolate and stir until it's all melted leave to cool for 2 hours, I know it's long but time went flying by. I had mine sitting on the table still in the saucepan and about 15-20mins before 2 hours, I put it in the fridge to speed it up.. You just want it to thicken really, so if you know quicker ways, use them.
Spread some of the frosting on one of the sponges and place the other one on top, Use the rest to cover ALL of the cake (sides + top) so know sponge can be seen.
After this, snap the Kit Kat bars in half and place all around the cake, so they stick to the frosting.
Grab your M&Ms (or other topping filler) and just cover the top completely! I then put mine in the fridge, as it was VERY hot today and didn't want the frosting dripping or Kit Kats melting!
